Recipe - Chocolate Nut Slice

I was feeling a little peckish this afternoon. I really wanted somethign a bit sweet and chocolatey to snack on- I've had a lot of cheese for the past few days, so anything but that seemed attractive to me. 

I spied a bag of macadamia nuts that I needed to use up, and this recipe was born!

Ingredients:
130 grams (1 cup) of macadamia nuts
50 grams (1/2 cup) almonds 
30 grams (1/4 cup) sunflower seeds
20 grams (1/4 cup) ground flax
20 grams (1/4 cup) shredded coconut
2 tablespoons coconut oil
2 tablepsoons peanut butter (I used Mayvers Peanut and Cacao spread)
2 T sugar free drinking chocolate ( I used Avalanche Sugar Free mix but you could substitute 1 tablespoon cocoa, and 1 tablespoon (or more) sweetener to taste)

Pulse macadamias and almonds in a food processor, the finer you grind them, the less chunky the bars will be. Add sunflower seeds, flax and coconut.

Melt coconut oil and peanut butter together, stir in chocolate powder and add it to the nuts. Pulse to combine.

Spread mixture in a lined baking dish, and refrigerate for half an hour until set. Cut into 12 equal pieces.

What I Ate - 4-10 August

I tidied up my pantry last week- I found 2 bottles of salad dressing (Ranch and Creamy Caesar) which need to be used this month- so I guess I will be eating a lot of salad!
I also got an order of low carb products from groceryrun.com.au so I have been using them as quick meals.

Monday
Breakfast: Coffee with cream
Lunch: Salmon pate with a packet of Fine Fettle Flats
Dinner: Chicken wings with my awesome dry spice rub for chicken wings, bok choy, zucchini and baby broccoli.

Tuesday
Breakfast: Coffee with cream, and a pack of Aussie Bodies Low Carb Apple and Raisin cookie bites
Lunch: A small steak with garlic butter. I had intended to make a salad, but I forgot!
Dinner: 2 salmon patties and salad (salad greens, romaine lettuce, smoked cheese and Caesar dressing)

Wednesday
Breakfast: Coffee with cream
Lunch: Salad with romaine lettuce, mixed salad greens, ham, smoked chicken, avocado, sunflower seeds and creamy Caesar dressing.
Dinner: Roasted lamb shoulder chop with roasted cauliflower

Thursday
Breakfast: Coffee with cream, a piece of smoked cheddar
Lunch: Got carried away with a project I was working on, so had a Vanilla Atkins shake and a pack of low carb cookies.
Dinner: 2 salmon burgers with peri-peri mayonnaise, and steamed broccoli and zucchini

Friday
Breakfast: Coffee with cream, smoked cheddar cheese (this is cheese was GOOD, and now it's all gone :( )
Lunch: Salad with chopped romaine lettuce, mixed salad greens, smoked chicken, ham, avocado, sunflower seeds and creamy Caesar dressing.
Dinner:

Saturday
Breakfast: Skipped because I slept in!
Lunch: Bunless burger from Grill'd (I had the Simon Says burger, which had grilled chicken breast, bacon, avocado, and herbed mayo on a nice big bed of salad), and a Pepsi Max
Dinner: I let my husband cook! Hot dogs with mustard and fried onions

Sunday
Breakfast: LC cookies, a vanilla protein shake.
Lunch: 8 chicken wings and garlic kelp salad at a Chinese restaurant
Dinner: Kassler steaks, cabbage with butter. An Atkins Cappuccino Nut Bar (to review for the blog) for dessert

What I Ate - 28 July - 3rd August

Monday:
Breakfast: Leftover pork sausage and coffee with cream
Lunch: 2 hot dogs with mustard, glass of diet cola
Dinner: Bolognaise (made with ground beef, tomato paste, canned tomatoes, garlic, oregano) on zoodles, with fresh mozzarella. Dessert was a Chocolate Cream Pot (dark chocolate and cream melted together, then set in the fridge to make a very rich ganache). After dinner snack: handful of smokehouse almonds, cup of tea with cream, and a can of ham in mayo

Tuesday
Breakfast: Coffee with cream
Lunch: Half a jar of sauerkraut, 2 kassler steaks (German smoked pork, kind of like very thick cut bacon!)
Dinner: Chicken breast strips with Nando's hot sauce and bok choy. Some dark chocolate and a handful of macadamias for dessert.

Wednesday
Breakfast: Coffee with cream, leftover spaghetti squash from Monday's dinner.
Lunch: 2 hot dogs with mustard (last hot dogs for the week!)
Dinner: Roast beef, roasted brussels sprouts, and a couple of roasted yams (NOT SWEET POTATO!). Dessert was whipped cream, half a dozen frozen raspberries and some macadamias smushed together.

Thursday
Breakfast: Coffee with cream
Lunch: Leftover roast beef with mustard
Dinner: More leftover roast beef, this time thinly sliced and served with roasted cauliflower.

Friday
Breakfast: Coffee with cream
Lunch: Leftover roast cauliflower, sauerkraut, and 2 kassler steaks.
Dinner: Chicken breast with taco seasoning, cubed zucchini and lots of cheese. No sour cream, since my husband forgot to pick any up after work.

I forgot what I ate in the weekend, but I know it involved pork belly and broccoli for lunch on Saturday, along with a large helping of capsicum from my husbands plate- he hates them and his beef with black bean sauce was full of them! We ordered pizza on Saturday night for dinner, so I ate a LOT of pizza toppings for dinner and lunch on Sunday. We shared a fresh coconut at the Queen Victoria Markets when we picked up some vegetables for the week, and then shared a sugar free Slurpee on the way home, since I had a sore throat and felt like something cooling.

Monday:
Breakfast: 3 hot dogs with mustard, and 2 coffees with cream
Lunch: 2 fried eggs, 2 slices of cheese and a serving of Blue Diamond smokehouse almonds
Dinner: Beef ragu with zoodles, fresh mozzarella torn over the top.

Tuesday: I was soooo hungry today! felt like I had the munchies!
Breakfast: Burger patty with a slice of cheese and a fried egg, coffee with cream
Lunch: 3 devilled eggs, 2 string cheese, coffee with cream, salami, slice of coconut flour brownie.
Dinner: Salmon with mixed herbs, roasted cauliflower, chai tea with cream. 2 Atkins peanut butter cups, strawberry cream cheese with ground almond.

Wednesday:
Breakfast: Small can of salmon, mixed with dijon and mayo.
Lunch: Tea with cream, salami and fresh mozzarella sprinkled with oregano and basil, baked in the oven to make a kind of pizza!
Dinner: Baked chicken wings with sesame sriracha and ginger marinade, lots of stirfried bok choy. For dessert, a Quest bar, a handful of peanuts and a sugar free lollipop.

Thursday:
Breakfast: Coffee with cream, 2 leftover chicken wings
Lunch: Coffee with cream, 2 burger patties with cheese.
Dinner: Massaman beef curry and green beans. Chocolate chia pudding and some peanuts

Friday
Breakfast: Coffee with cream, 2 burgers patties with mustard
Lunch: Chocolate chia pudding, 2 teas with cream, a handful of peanuts.
Dinner: Braised speck with cabbage and butter. Chai tea with cream, some peanuts, hot chia pudding, 2 string cheese and a handful of peanuts.

Saturday
Breakfast: Coffee with almond milk and cream (i only had a drizzle of cream left!), and a handful of macadamias
Lunch: Chinese style chargrilled chicken wings, pork belly and lamb, and a can of diet coke
Dinner: Rotisserie chicken with some mayo, hot chocolate chia pudding for dessert.

Sunday:
Breakfast: A handful of jerky
Lunch: About 1/3 of a Nando's chicken with mild sauce, and a side salad.
Dinner: Leftover rotisserie chicken, and coconut chia pudding for dessert.

Grocery Shopping - 12/13 July

I learnt a pretty big lesson this week-  BE PREPARED! I completely forgot to buy more hot dogs, which you can probably see, is my staple lunch food. I ate the last couple on Monday, and on Tuesday there was sort of a panic. It's Thursday now, and I'm sort of enjoying the variety and the challenge of having to come up with something edible for lunch. Yay me!

This week, we didn't go to Costco. It felt weird breaking our routine, but I wasn't tempted to eat any of their hot dogs or pizza, which was a nice change.

We went to Aldi. We got:

Pack of gravy beef (around 600 grams) - $4.81
Beef mince (just over 2kgs) - $10.40
Piece of speck - $3.21
Tub of bocconcini (fresh mozzarella) - $3.69
Sugar free energy drink - $0.99
1kg cheddar cheese - $6
Flaked almonds - $3.29
Jar of Massaman curry paste - $2.49

Plus for my husband:

We then went to the South Melbourne Market. We mostly went for a walk, not to buy anything in particular, and there we got:

So we were WAY under budget, which is nice sometimes, because yay, money saving. But I did struggle a little this week to make tasty keto food, and I can't wait to buy some more hot dogs! It's nice to empty out the freezer a bit, and make our way through the chicken I appear to have been stockpiling. We also had plenty of vegetables, so I guess i didn't do too badly.

Dinner: Chicken thigh ragu, with zoodles, fresh mozzarella and basil leaves

Tuesday:
Breakfast: 4 hot dogs with mustard, coffee with cream
Lunch: Caprese salad (tomato, fresh mozzarella, basil leaves, extra virgin olive oil, salt and pepper)
Dinner: Beef stew with roasted cauliflower, and a chai tea with cream.

Wednesday:
Breakfast: Coffee with cream and salami
Lunch: Hot dogs and mustard
Dinner: Chicken thighs, zoodles and stirfry vegetables.

Thursday
Breakfast: Coffee with cream, and leftover stirfry
Lunch:  Hot dogs and mustard
Dinner: Chicken taco salad with lots of cheese and sour cream

Friday
Breakfast: Cookies and cream Quest bar and coffee with cream.
Lunch: 4 hot dogs and mustard
Dinner: Indian takeaways! Tandoori chicken, a tandoori lamb cutlet and a few pieces of paneer.

Saturday:
Breakfast: leftover Tandoori chicken and a coffee with cream
Lunch: Soft taco filling (pulled pork and beef, with shredded vegetables, tomato, cheese and sour cream)
Dinner: Leftover butter chicken curry.

Sunday:
Breakfast: last of the leftover butter chicken, and a coffee with cream
Lunch: Had a late breakfast, so nothing.
Dinner: Beef burger, topped with fried onions, lots of cheese, mayo, SF ketchup and mustard

Recipe- Creamy Asparagus Soup

Winter is well and truly here in Melbourne. Unfortunately. But that also means it's the perfect soup weather!

Soup is the perfect way to warm up and get your vegetables in! I grabbed the asparagus I used in my soup at the South Melbourne Market  on Sunday and this soup was the perfect way to use them.

Creamy Asparagus Soup

1/2 small onion
2 cloves of garlic
2 slices of bacon (optional)
1 T butter
1 T olive oil
2 bunches of asparagus
1-2 stalks of celery (optional)
2 cups of chicken stock
1 T parmesan
Cream (to taste, but I used around 2 T)
Salt and pepper (to taste)

Finely chop onion, garlic, bacon (if using) and celery. Heat oil and butter in a pan, add onion, bacon, garlic and celery. Cook until softened, stirring often to make sure it doesn't burn (or your soup will have a brownish hue). Rinse and chop asparagus into 5mm pieces. Add to pot, and stir to cover in all the delicious buttery goodness. Add chicken stock and a little cracked black pepper. Cover, bring to the boil and cook for 10 minutes, or until the vegetables are soft.

Pour soup mixture into blender or food processor. Add cream and parmesan, blend and taste. Blend until smooth, tasting and adding more seasoning as you need.

Serve with a swirl of cream and chopped parsley.

Monday:
Breakfast: Coffee with cream, 50g mild hungarian salami
Lunch: Beef burger patty with 2 slices of bacon and a fried egg (complete with runny yolk!)
Dinner: Salmon fillet with parmesan and black pepper, dessert was strawberry cream cheese mixed with whipped cream and macadamias.

Tuesday:
Breakfast: Coffee with cream, 2 cups of tea. (it's COLD, I love my hot drinks when it's cold!), roasted salted macadamias.
Lunch: Cold corned beef (cooked yesterday for my husband's lunches though we've eaten half of it already!)
Dinner: Bolognaise with shirataki noodles and zucchini noodles, topped with lots of parmesan and a drizzle of garlic infused olive oil. Dessert was lemon flavoured cream cheese, mixed with whipped cream, and sprinkled with roasted almond meal.

Wednesday:
Breakfast: Coffee with cream, leftover bolgonaise and noodles
Lunch: 2 beef burger patties with mustard and cheese slices. Cup of tea with cream.
Dinner: Creamy coconut chicken curry with broccoli

Thursday
Breakfast: 3 hot dogs with sugar free ketchup and mustard
Lunch: 2 beef patties with cheese and mustard, and a chai tea with cream
Dinner: Meatloaf muffins and broccoli

Friday:
Breakfast: Coffee with cream, 2 leftover meatloaf muffins
Lunch: Chicken Caesar salad- a pan fried chicken thigh, lettuce, Caesar dressing and parmesan, chai tea with cream.
Dinner: Chicken wings from a local pizza place

Saturday:
Breakfast: Leftover chicken wings, a chocolate protein shake.
Lunch: Pizza toppings and a hotdog (no bun) from Costco
Dinner: Wasn't hungry, so I had two cups of tea while watching a movie :)

Sunday:
Breakfast: Coffee with cream
Lunch: Chicken satay from a Chinese place, sparkling iced tea.
Dinner: Pizza on a low carb tortilla (salami, a smear of tomato, mozzarella, oregano, onion, bocconcini and fresh basil), and a glass of almond milk (though I'd really really love some soda!)

Grocery Shopping - 5/6 July

This probably isn't the most exciting blog post I've ever written, but I like keep records of this kinda stuff so other people who are on or considering keto can get some data on food costs and the like. Starred items are not keto items, and my husband will eat them!

Saturday we went to Costco! Yay! I love Costco!

We spent $51.10, and I lost my receipt, but I know the price details of a few items.

Chicken wings - $3.99/kg
Chicken drums - $3.99/kg

Bok choy (6 'heads') - $3.49
Stir fry mix (cabbage, carrot, onions, baby broccoli) 1kg bag - $3.99

The chicken thighs are cheaper elsewhere, but I like the convenience of the packs the chicken comes in- the chicken is divided into 3 sections, which can tear off, and freeze really well. The wings and drums are an excellent price though.

Saturday night we went to Aldi. Riveting, I know ;) I really wanted salmon for dinner, and I wanted to grab some canned tomatoes while I had my packhorse (I mean, husband) to lug them around for me.

This afternoon, we went for a walk to the South Melbourne Market. It's roughly 2.5kms each way, but it wasn't raining (rare for Melbourne in winter!), so I was happy for a little excursion.

We bought:
Bunch of basil (still with roots attached, so I'll try to regrow it!) - $1
Apples (roughly 1kg, 7 apples) - $1*
Jalapenos (4 giant red ones!)
2 bunches of asparagus
Mandarins (10, about 1.5kgs)* - all 3 for $2

So, grand total spent was: $103.56
$16.44 under budget! I would have spent that on garlic, coriander and some diet soda ideally! :P

My meal plan for this week looks like:
Monday: Ragu with stewing beef from the freezer, bocconcini, zoodles, torn basil leaves
Tuesday: Creamy mustard chicken thighs with roast cauliflower
Wednesday: Frozen salmon, roast potatoes for my husband, green beans.
Thursday: not sure what I'll have, but baked sweet potatoes with refried beans, sour cream, cheese for my husband.
Friday: Takeout! Woohoo!

Breakfast is muesli or porridge for my husband, it's always coffee with cream, sometimes with a protein shake or a Quest bar.
Lunches are always leftovers for my husband! For me, I'll have salad, hot dogs with mustard, something with sardines, fried eggs, or canned ham with mayo.

At the time of writing this, the danishes have been eaten, the flatbreads are lined up for pizzas and some for the freezer. Apples and mandarins for his snacks, along with oranges and bananas I bought last week (might have to make banana muffins or something with the bananas!)

Lunch: 6 chicken wings and some shredded kelp at a Chinese restaurant
Dinner: Creamy mustard chicken and baby broccoli. Chocolate cupcake for dessert.

Tuesday:
Breakfast: Small pack of tomato and basil Fine Fettle Flats and some chicken pate
Lunch: 1/4 of a chicken and a side salad at Oporto
Dinner: A salmon burger, half a sliced avocado, drizzled with garlic infused olive oil, lots of salt and pepper

Tuesday:
Breakfast: Toasted flax coconut bread with butter, and a coffee with cream
Lunch: Salmon burger with half a sliced avocado. Tea with cream.
Dinner: Chicken taco salad, with avocado, cheese and a few slices of tomato. Last remaining cupcake with a little whipped cream.

Wednesday
Breakfast:  Coffee with cream
Lunch: Flax coconut bread with butter
Dinner: Chicken thighs in a coconut curry sauce, with baby broccoli

Thursday:
Breakfast: Protein shake and coffee
Lunch: Hot dog (with no bun) and pizza (toppings only) from Costco
Dinner: 2 bratwurst, coconut flax bread with herbed goats cheese

Friday:
Breakfast: none! Oops ;)
Lunch: Smoked salmon and salad from Ikea, black coffee.
Dinner: Roast lamb shoulder, roast cauliflower, roast baby broccoli.

Saturday:
Breakfast: Chocolate protein shake
Lunch: Nando's- quarter chicken, chicken tenderloin, and a side salad.
Dinner: Curry made with leftover roast lamb, green beans. Dessert was a deconstructed cheesecake- whipped cream mixed with lemon cream cheese, sprinkled with roasted almond meal, and topped with a sliced strawberry.

Sunday
Breakfast: Bacon, eggs and half an avocado
Lunch: Salmon burgers and half an avocado
Dinner: Oven baked mozzarella sticks- I was too full after these to make a real dinner!

What I Ate: 2-8 June

Keto food can sometimes sound scary to an outsider. Lots of fat can definitely be off-putting. This week, I kept track of what I've eaten, to give anyone interested in keto an idea of what a week of keto food can look like. Please note not every meal has bacon ;)

Monday:
Breakfast: Bacon, and a coffee with cream.
Lunch: Shredded beef on baby spinach salad from Thr1ve, with an Island Coffee
Dinner: Beef sausages, celeriac mash, and cabbage fried in bacon grease.

Tuesday:
Breakfast: Island Coffee and Protein toast with pate from Thr1ve.
Lunch: Lamb meatballs, yellow pepper strips, baby spinach, tomato, feta, olives- and dijon apple cider vinaigrette
Dinner: Jamie Oliver's Moroccan spiced chicken breast steaks, baby spinach, feta, olives.

Wednesday:
Breakfast: Coffee with cream, chocolate protein shake
Lunch: Salmon with teriyaki on baby spinach salad from thr1ve, with an Iceman coffee.
Dinner: Lamb steaks with oregano and rosemary, baby spinach, feta, olives. A little whipped cream with cocoa for dessert.

Thursday:
Breakfast/lunch: Bag of kale chips, 200g of wild game pate, Fine Fettle Flats Zucchini and Almond crackers.
Dinner: Roast beef, mustard cream, roasted brussels sprouts, asparagus.

Friday:
Breakfast: 100g of duck and orange pate, a serving of Fine Fettle Flats Zucchini and Almond crackers, 2 coffees with almond milk
Lunch: Leftover chicken from Wednesday, cold roast brussels sprouts.
Dinner: 3 lamb koftas, baby spinach salad, feta, olives.

Saturday:
Breakfast: Leftover lamb koftas from dinner the night before
Lunch: Smoked chicken salad from Third Wave Cafe in Prahran
Dinner: Thighs from a Costco rotisserie chicken. Handful of smoked Blue Diamond almonds while watching a movie.

Sunday:
Breakfast: Chocolate protein shake
Lunch: Sausages and bacon, grilled in the local park near us on their free barbecues!
Dinner: Coconut chicken satay curry, and stirfried bok choy. A chocolate cupcake for dessert

Day 14 - Week 2 in Review



Hurrah! Week Two is over! Only two more weeks to go until I can return my lavish shopping days.

Ha, not likely. I'm saving to get myself this DSLR camera for my birthday in mid-May. Maybe I should start up a KickStarter to fund it myself! Hopefully my husband will come through ;)

I already wrote about my shopping trip, but I also added a few more things on Saturday. I didn't feel like cooking, so we got a hot roasted chicken from the supermarket for dinner, and a loaf of bread so my husband could have some carbs with his chicken. He also discovered he rather enjoys my diet orange soda. That REALLY sucks for me!

My husband and I went out for lunch on Sunday (he had sushi, I had a naked burrito!), and decided to spend the last of the grocery budget reserves- I guess I am always worried that I won't have enough keto food left by the end of the week. I remembered that today is St Patrick's Day, so I wanted to grab a corned beef to cook for dinner. I didn't get a cabbage though, as they were $4 for a tiny one! I had about 2 cups of cabbage left from dinner on Sunday, so I'll use that to make butter fried cabbage.

What I ate last week:

Monday: Coffee with cream, 2 kangaroo burgers with cheese. Glass of almond milk, string cheese. Morroccan spiced oven baked salmon and green beans with butter.
Tuesday: Coffee with cream, leftover Morrocan salmon. Celery with onion dip, almond milk, ham and string cheese. Cookie dough Quest bar. Medium-rare rump steak with salsa and sour cream, sugar free jelly and cream for dessert.
Wednesday: Ham, almond milk, coffee with cream. Sugar free V, low carb bites, string cheese. Baked Korma chicken thighs, mashed cauliflower and green beans. Jelly and cream for dessert.
Thursday: Ham and coffee with cream. Leftover chicken korma, and haloumi with green beans. Crackslaw. Glass of almond milk for dessert.
Friday: Leftover crackslaw, coffee with cream. Ham, another coffee with cream. Keto quattro formaggi pizza.
Saturday: Plate of lamb souvlaki meat with yogurt feta sauce. 2 chicken thighs and drums from a rotisserie chicken, and 2 mini keto cheesecakes
Sunday: 2 mini cheesecakes, a Naked Carnitas Burrito from MadMex, 2 kangaroo patties with homemade slaw, some fried onions and whole egg mayo. Another cheesecake for dessert!

Day 13- A Whole New (Keto) World

Today's challenge is a pretty short one.

Think of your favourite food. It could be anything- pizza, ice cream, cookies! Something you've been craving for a while.

Now, either Google, or go to KetoRecipes and type in the name of that thing. (If you're using Google, add keto to the description, or you'll just get high carb versions).

I would highly recommend you add the ingredients for that to your shopping list next week!

Recipe: Baked Keto Mini Cheesecakes


Last night, I made some AMAZING mini cheesecakes. Baked ones, of course, the other type can barely call themselves cheesecake, honestly.

I hadn't had cheesecake in a while, and I wasn't even sure if I'd like how these turned out. I had 2 tubs of cream cheese in the fridge- yes, cream cheese in Australia usually comes in a tub. I can get Philly cream cheese in a block, but it's a good dollar more expensive, and I don't think it's *that* good, really. I was very very pleasantly surprised. These taste amazing, and the texture is perfect! The only problem is that they are a serious calorie hit, so stick to one a day ;)

Ingredients:
2 packages/tubs of cream cheese (~500grams/18oz)
50 grams of butter
1 cup of almond meal
2 eggs
Sweetener of choice equal to about 1/3 cup
1 teaspoon of vanilla
OR 10 drops of french vanilla flavoured stevia

Melt butter, add almond meal. Press into cupcake liners (I recommend the reusable type). Beat together cream cheese, eggs, sweetener and flavouring. Spoon into cases, and flatten out the tops with a knife.

Bake at 180 degrees Celsius for 16-18 mins. The tops should have cracked a little. Sprinkle the tops with a little cinnamon if you'd like. Cool and then keep in the fridge.



These work out to be 4 net carbs each, totally worth it for such tasty cheesecake!

Recipe: Crackslaw



Crackslaw is one of my favourite keto dishes. It's easy and quick to cook, and dirt cheap. Made primarily of ground beef and vegetables, it's a great option for a keto meal, and non-ketoers will like it too!


Ingredients:
500g ground meat (I use beef, but chicken or pork is great too- the higher fat %, the better)
4 cups of cabbage, chopped finely OR a bag of shredded slaw mix, no dressing
1 package of shirataki noodles (or kelp noodles or shirataki rice)
1 tablespoon soy sauce (or tamari or coconut aminos)
1 teaspoon garlic powder
1 tablespoon sesame oil
1-2 green onions, sliced finely
Sesame seeds and sriracha, as a garnish

Brown meat in a large frying pan, preferably one with a lid, add green onions and stir, cook for a few minutes. Add cabbage, and mix into the meat mixture- there will be a LOT of cabbage, but it will cook down. Leave for a few minutes, then add seasoning and about half a cup of water. 
Cover, stirring every couple of minutes to make sure the cabbage cooks evenly.
Prepare shirataki noodles to packet directions. If they are in brine, rinse them VERY THOROUGHLY. Add noodles to the cabbage mixture once the cabbage has shrunk and softened considerably. Cook for 3-4 mins, to allow the flavours to infuse into the noodles.
Plate up, and add sriracha and sesame seeds as a garnish to taste.

Heart shaped sriracha swirl optional.

Recipe: Green Beans + Haloumi



I love green beans, especially with something a little salty- like cheese! This is great for vegetarians- a tasty way to eat vegetables with some fat

Ingredients:
2 cups of green beans
Haloumi (to taste, I used a block, about 180 grams)
1 tablespoon of butter or oil (or bacon grease if you're not a vegetarian!)
1/2 teaspoon garlic powder
Salt and pepper

Dice haloumi into small pieces. Heat pan to a medium-high heat, add butter/oil and then add haloumi, cook for a few minutes or until golden brown. Turn haloumi over (either by shaking, stirring or using tongs). Add green beans, turn down heat to medium. Add garlic powder, a splash of water (about a tablespoon) and a little pepper. Cover, shaking pan every few minutes, and let cook for about 5 minutes, or until beans are cooked and a little soft. Add salt to taste, but the haloumi is quite salty so you might not need any.

Serve and enjoy. 

Day 8 - Getting Ready to (Eat) Clean


Day 8's challenge is to Get Ready to Clean. Sure, I could write about housework (sorry guys, that will probably be tomorrow's topic!), but instead I'm going to write about eating clean.

Eating clean is one of those vague catch-all words related to diet. It's bandied about all over the internet, especially weight loss forums and Instagram. So today I'm going to write about eating clean for Keto (my style).

How do I define eating clean on Keto?

Meat (or other proteins)
Keto shouldn't be all bacon. It shouldn't be all steak either. There are a lot of good, well-priced meats that are awesome.
Ground beef should be one of your staples- it's cheap, has a great fat content and you can use it for pretty much infinite different meals. Also try: ground lamb, pork, veal, turkey and chicken.
I rate chicken thighs very highly. They are great baked, grilled (best with boneless), sliced in stirfries, amazing in curries. The meat stays nice and tender, unlike chicken breast which can easily be dry. Though you can TOTALLY eat chicken breast (and other cuts) on keto too!
Depending where you live in the world, different meat options will be cheaper- Lamb is cheap for me (hi Australians!), turkey might be cheaper if you live in the US.
Go crazy on seafood too. Fish, especially salmon, is packed with Omega-3's which are so good for you! Some shellfish can have a little carbs, but read nutritional information and keep yourself informed. if you don't like 'fishy' tasting fish, look for mild tasting fish, and add herbs and spices for flavour.
Offal is cheap EVERYWHERE! It sounds daunting, but don't be scared! It CAN taste good! Lightly fry liver with bacon and onions, add a dash of cream to pan juices to make an amazing gravy. Heart can be thinly sliced and fried quickly on high heat, and it's JUST like steak!
(If you're a vegetarian, there are plenty of protein sources for you- tempeh, tofu, Quorn, seitan, soy protein)

Vegetables
We're grown-ups. We should eat our damn vegetables. There is a HUGE variety of vegetables that are great for keto. Cauliflower, broccoli, spinach, bok choy, mushrooms, peppers, edamame, zucchini, celery, asparagus, green beans, and more leafy greens than you could shake a stick at. Don't forget tomatoes, onions and garlic- which have some carbs, but they add flavour too!
Don't like vegetables? Add flavour! Garlic or bacon to green beans, bacon to cabbage, cover your broccoli in cheese, mash your cauliflower and add tasty butter, cream and cheese! Stuff your zucchini with a variety of tasty things! There are so many ways you can make vegetables tasty.

Dairy
Sure, milk may be out. But there are other options. Cheese! So many different kinds of cheese! Heavy cream, butter, greek yogurt (check your labels), cream cheese, sour cream, mascarpone, creme fraiche, cottage cheese, even low carb ice creams.
If you're missing milk or don't eat dairy (hi Paleoers!), try almond milk or coconut milk.

Nuts
I love nuts. They make an awesome quick snack. I'm a big fan of macadamias, but almonds, brazil nuts, pecans, walnuts, pistachios, peanuts and cashews are great too. Watch your portion size though, as nuts are notoriously easy to overeat. Coconut products are VERY popular on keto too- coconut oil, especially. You can find coconut alternatives to almost EVERYTHING, which are handy if you don't do dairy.

Other stuff
I love coffee. Yay, coffee! If you don't like coffee, try tea. It's nice to have something else to drink other than water. I occasionally have an energy drink (maybe one a fortnight), and those are okay in moderation, as long as they are sugar free. I am a fan of diet sodas too, and I try to limit myself to one a day, maybe 4-5 times a week.
I am a big fan of shirataki noodles, low carb high fibre noodles- available in most supermarkets under various brand names. I also like kelp noodles, and they're technically a vegetable!
There are a lot of low carb products out there. Protein bars, shakes, candies, chocolate, sodas, desserts- the list is endless.
I try to limit myself to one of them a day, to make sure I have plenty of carbs for vegetables, and anything incidental, like spices, sauces and nuts. I have also found that limiting the sweet things I eat has stopped myself craving more sweet things. It's a great feeling to not be tempted by chocolate!

Recipe: Korma Chicken Thighs with Mashed Cauliflower



I just ate this for dinner, and it was so good I had to share!

Korma Chicken Thighs

Ingredients:
4 chicken thigh cutlets (These usually have one bone in, and cook faster then regular thighs, but feel free to substitute- just cook for ~15 mins longer)
1-2 tablespoons of korma paste (feel free to make your own, but the jarred stuff is great, 1 tablespoon is ideal if you want it mild)
1-2 tablespoons of heavy cream or yoghurt (use the same amount as you used of paste)
Garam masala

Mix together the korma paste and cream/yogurt. Slather onto chicken thighs. Place in a baking dish.
Cook for 30 mins at 180oC or until juices run clear when a skewer or knife is inserted.

Sauce:
Reserve the pan juices- there should be a reasonable amount of curry paste run off. Add 1-2 tablespoons of heavy cream or yogurt, and mix together, the sauce should emulsify a little. Pour sauce over chicken to serve. Optional- sprinkle with a little garam masala (Indian mixed spice mix)

Mashed cauliflower (makes 2 giant servings)

Ingredients:
500 grams of cauliflower (I used frozen tonight, but fresh is awesome too)
2 tablespoons of parmesan (optional)
2 tablespoons of cream (for a paleo/non-dairy option, use coconut cream)
Salt and pepper to taste

Cook cauliflower until reasonably well done. For frozen cauliflower, I bring water to the boil, salt the water, then add the cauliflower. Cover and boil for approx 5 minutes. Drain, and put into a bowl or food processor. Add the other ingredients, and mix/mash until it looks reasonably smooth, then serve!

You could add garlic powder and chives for a nice garlicky mash. Add butter to up that fat.

Serve with other vegetables if you like them- I added green beans, but broccoli, spinach or asparagus would be good.

Terrible photo is the best I could manage. Food isn't pretty, it's tasty!

Day 7 - A Look Back


Blogging is much harder than I thought it would be! I thought it would be easy to pump out a couple of hundred words on whatever it is that the challenge for the day is, but I find life has other plans.

I am also kinda surprised I made it through the week without shopping! I definitely browsed, (ASOS, you are evil and tempting me), but I did not buy! Round of applause for me, please.

I started tracking everything on MyFitnessPal from Tuesday, a habit I got out of after a few months on Keto. I wish I'd started on Monday! My week looked like this:

Monday: Coffee, leftover meat, string cheese. Crackslaw for dinner with kelp noodles.
Tuesday: Coffee, burger patty with cheese and a fried egg, celery and french onion dip, salami sticks, cookie dough Quest bar, coconut chicken curry with broccoli and green beans.
Wednesday: Coffee, 2 burger patties with cheese, cookie dough Quest bar, toasted seaweed, and taco salad with shirataki 'rice', lots of salsa and sour cream.
Thursday: Coffee, 2 burger patties with salsa, string cheese, celery with dip, chicken breast 'steaks' with kelp noodles in a creamy cheese sauce, and a cookie dough Quest bar.
Friday: Coffee, salami sticks, celery + dip, string cheese, ham, greek yogurt with heavy cream and macadamias, chicken breast steaks and mozzarella.
Saturday: A jerky bar, roast duck and pork belly, shared a 1% sugar Slurpee, string cheese and taco salad with salsa, sour cream and LOTS of cheese.
Sunday: 1/4 rotisserie chicken, ham, string cheese, mini protein bar, 2 kangaroo burgers with cheese and low sugar ketchup, then greek yogurt and heavy cream.

From this menu, you would be able to tell that I only eat one big meal, and that's usually dinner.
I ate out of the house twice- once was on Saturday for lunch (roast duck and pork belly), and on Sunday for lunch (1/4 rotisserie chicken).

You can also tell I tend to have a lot of food I can grab and eat quickly- things like ham, string cheese, celery and dip, Quest bars and leftover burger patties. And coffee, of course! This is definitely a recipe for success, so it means I am less tempted to eat something not so good for me (or my wallet).

I went grocery shopping twice- once on Saturday, and I grabbed a few more things on Sunday while we were out (I had plenty of grocery budget to spare, and I still have some left!)

(I hate carrots. I never ever have liked them, and they are a bit high in carbs for me. So I feed them to my husband. The same husband who swore black and blue the scissors were lost and couldn't be found anywhere. So I bought a new pair, and 5 mins after we get home, he found the original pair. Sigh.)

*Almond milk was on special, 3 for $3.99 which is a VERY good price. It's normally around $3.65 a litre. We scanned them at the checkout, and they came out as full price. The store checked, and it should have come up at the special price, so we got one of them for FREE, so it only cost us $1.33 each for the other 2 litres of almond milk. I was pretty happy with that saving, since it was only about a minute of waiting.

I am pretty happy with how my week went. I lost a reasonable amount of weight, stuck to my budget, and was reasonably productive! All three of those things don't usually happen together.

Day 5 - Eat Out At Home - Burgers!



It's well known that eating at home is healthier, often tastier and much cheaper than eating out all the time. Though sometimes we're craving something- for me, that's a burger!

Bunless burgers are the keto holy grail. There are so many options for toppings.
Linda's Low Carb Recipes has 29 different burger/sandwich options!
My favourite is just minced beef, squashed into a patty and cooked, then topped with fried onions, sliced cheese (yes, the plastic wrapped type), a squirt of yellow mustard and a fried egg on top. Add sliced tomato and some lettuce leaves for a more balanced meal. Super tasty! You can also wrap the burger in lettuce, which is much better than you would expect.

If you like a bread type bun, then Oopsie Rolls are for you. They sound weird, but try them, just once!
Using large portobello mushrooms as buns is popular too, like this, hailed as The Ultimate Gluten Free Burger in the New Zealand media.

I find burgers to be a pretty cheap option for dinner. Minced beef is readily available and cheap here- I pay around $5/kg, and I can easily get 6-8 burgers from a kilogram. That's a whole week of dinners for $5!

All this talk of burgers has made me hungry- I might have to go whip myself up one now...
